You get 18-35 pieces per kg. Because the meat acts like a sponge beware of scallops soaked in brine to plump them up only to contract to shrivelled lumps on cooking! Ours are top grade 'dry' scallops with a sweet, delicate flavour which requires very little cooking - pan fry, steam or grill.
